Ingredients:
- 1 cup coconut sugar⠀
- ½ cup vegan butter⠀
- 1 tsp vanilla extract⠀
- 1 tsp peppermint extract (optional to make it more festive)⠀
- 1 cup oat flour⠀
- ¼ tsp cinnamon⠀
- ½ cup + 2 tbsp raw cacao powder⠀
- 1 tsp baking soda⠀
- ¼ tsp baking powder⠀
- ½ tsp pink salt⠀
- 2 tbsp full fat coconut mylk⠀
- 1 cup vegan chocolate chips
Instructions:
- Preheat oven to 350ºF (175ºC) & line a baking sheet with parchment paper.⠀
- Cream together softened vegan butter, sugar, and vanilla.⠀
- Add in all other ingredients & combine (excluding choco chips)⠀
- Mix in chocolate chips with hands.⠀
- Grab 1 tbsp of cookie batter, roll into a ball & place on baking sheet. Continue until all batter is gone.⠀
- Bake for 12 minutes.
- Let cool for 30 minutes.
