Beetroot Hummus


Vegan Beetroot Hummus is a vibrant and nutritious twist on the classic, blending earthy beetroot with chickpeas, tahini, and garlic to create a strikingly pink and flavorful hummus. Ingredients:

  1. 200 g fresh beetroot⠀
  2. 3 tbsp tahini⠀
  3. 1/2 cup water⠀
  4. 1 tbsp lemon juice⠀
  5. 250 g canned chickpeas⠀
  6. 2 tbsp olive oil⠀
  7. Salt & pepper


Instructions:

  • Cut the beetroot in half and boil for 10 minutes.⠀
  • Place the beetroot in a food-processor and process until creamy.⠀
  • Add in tahini, water and lemon juice and process for another 2 min.⠀
  • Add in chickpeas, salt & pepper and process until creamy.⠀
  • Top with olive oil & pepper and seeve with vegggies or bread.
