Mushroom & No-Beef Pepper Pies


Vegan Mushroom & No-Beef Pepper Pies are a savory delight, marrying rich mushrooms and hearty no-beef filling in a flaky pastry crust, creating a comforting and flavorful handheld meal. Ingredients:⁠

  1. 1 brown onion, diced ⁠
  2. 1 cup mushrooms, diced⁠
  3. 400g vegan ‘beef’ mince ⁠
  4. 2 cups vegetable stock⁠
  5. 2 tbsp flour⁠
  6. 2 tbsp tomato paste⁠
  7. 1 tsp black pepper⁠
  8. 3 sheets puff pastry⁠


Instructions:

  • Add diced onion to fry pan with some olive oil and saute.⁠
  • Add mushrooms and mince, cooking until mince is slightly browned.⁠
  • Meanwhile, stir together stock, flour, tomato paste and pepper. Once combined, pour over mixture in fry pan.
  • Cook until sauce begins to boil, and then reduce heat and stir until sauce thickens.⁠
  • Cut thawed puff pastry to desired size and spoon mixture into pies. Cook pies as per Pie Maker instructions⁠.
