Ingredients:
- 1 small zucchini, sliced
- 3 c baby spinach
- 1/4 C cherry tomatoes, halved
- 1/4 avocado, sliced
- handful of fresh greens
- 1 TBSP hemp seed
- 1/2 lemon, juiced
- microgreens
- crushed red pepper
Instructions:
- Add spinach to a small saucepan with 1/4 C water and cover. Steam until wilted and tender. drain.
- Lay zucchini in a single layer in a skillet on medium heat and cook until golden. Flip and repeat.
- Add to bowl with remaining ingredients and a squeeze of lemon.
