Mango and Passion Fruit Sago


Mango and Passion Fruit Sago dazzles with tropical sweetness, blending creamy coconut milk with the vibrant flavors of mango and passion fruit. Recipe:

Ingredients:

  • 1/3 cup sago (aka tapioca pearls) soaked for 1 hour
  • 1 canned evaporated oat milk

Instructions:

  • In a large pot, bring about 5 cups water to a boil add the soaked sago and cook until its soft and translucent.
  • Drain water in strainer and wash it under running tap water.
  • Transfer sago to a bowl, add evaporated oat milk and mix well.


Mango Layer:

Ingredients:

  1. 2 cups fresh mango puree
  2. 1/4 cup Coconut milk
  3. 1 tsp agar agar powder

Instructions:

  • Add mango puree and coconut milk to a saucepan, bring up to a boil.
  • Whisk in agar powder. Continue to simmer for 1 min.
  • Pour mongo into jars. Refrigerate until set.


Ingredients:

Passion Fruit Jelly

  1. 6 passion fruit pulp
  2. 1/2 cup water
  3. 15g sugar of choice
  4. 1 tsp agar agar powder

Instructions:

  • Add water, sugar and passion fruit to a saucepan, bring up to a boil. Add agar powder, and cook until dissolved, whisking constantly, continue to simmer for 1 minute.
  • Turn off the heat. Pour jelly into food container, refrigerate until set. ⁣
  • To assemble, divide sago into jars, keep refrigerated.
  • When it’s ready to serve, garnish with passion fruit jelly.
