Baked Sweet Potatoes


Vegan Baked Sweet Potatoes are a simple yet satisfying dish, featuring tender sweet potatoes roasted to perfection, intensifying their natural sweetness and creating a soft, caramelized texture. The baked sweet potatoes offer a nutritious and flavorful base for various toppings, from savory options like black beans and avocado to sweet additions like cinnamon and maple syrup. Ingredients:

  1. 2 sweet potatoes
  2. 1 avocado
  3. Soy yogurt or creme fraiche
  4. Chili, salt and pepper
  5. Lime or lemon
  6. Sesame seeds and basil


Instructions:

  • Cut potatoes in half length wise.
  • Place on a baking tray and bake in the oven in 20-25 mins at 175C hot air until soft.
  • Allow to cool.
  • Serve with avocado, yogurt, basil, sesame seeds, chili, lemon, salt and pepper.
