Butter Bean Bowl


The Butter Bean Bowl is a wholesome and satisfying dish, featuring creamy butter beans as the star, complemented by a medley of fresh vegetables and aromatic herbs. The dish’s simplicity allows the natural flavors of the butter beans to shine, creating a nutritious and delicious plant-based meal. Recipe:

  • Made this by sauteing about 8-10 grape tomatoes (and 1 regular tomato, diced) in 2 tsp olive oil with 2 tbsp fresh.
  • Chopped parsley.
  • 1 red bell pepper, chopped.
  • 1/2 medium sized (peeled & diced) sweet potato over medium-high heat in a non-stick pan for 10 minutes.
  • Added 3/4 cup vegetable broth and let everything simmer for 5 more minutes before adding 1 can of butter beans (rinsed and drained).
  • 1 green onion, chopped.
  • A handful of fresh spinach and a little fresh thyme and more parsley. (The broth was salty enough, so no need to add any extra salt).
  • Cooked it for 2 more minutes until the sweet potatoes were tender.
