Cauliflower Tacos with Spicy Jalapeno Avocado Sauce

Ingredients for Air-Fried Cauliflower:

Makes 3 Tacos

  1. 1/4 head large Cauliflower, cut into florets⁠
  2. 1/4 Red Onion, cubed⁠
  3. 1 tbsp Traditional Tunisian Harissa
  4. 1/4 cup Red Enchilada Sauce
  5. Salt & pepper⁠

Ingredients Jalapeno Avocado Sauce:

Makes ~1.25 cups

  1. 2 large Avocados⁠
  2. 2 small/medium Jalapenos⁠
  3. 1 Serrano Pepper (can omit for less spice) ⁠
  4. 1 small bunch Cilantro (including stems)⁠
  5. 1 medium Lime, juiced⁠
  6. 3-4 cloves Garlic⁠
  7. 1/4 cup Avocado Oil
  8. 1 tsp Sea Salt⁠

  • Crunchy Grain-Free Taco Shells
  • Mexican Shredded Cheese⁠

Instructions:

  • Start off by prepping your cauliflower & onion. In a pan, add some olive oil & cook your onions on medium heat for 2-3 mins.
  • Then add in your cauliflower. Cook for 5-6 mins until it starts to brown.⁠
  • Then add in your harissa, enchilada sauce, salt & pepper. Evenly mix & cook.⁠
  • Scoop everything out & into your air fryer. Use air fryer oven for this! Air-fry at 425* for 8 mins.⁠
  • Meanwhile, add all the ingredients for the sauce to a blender or food processor. Blend until creamy.⁠
  • Once your cauliflower is ready, grab a taco shell, fill with a layer of cheese & stuff with your cauliflower. Finally, top with your avocado sauce!⁠
