Ingredients for Air-Fried Cauliflower:
Makes 3 Tacos
- 1/4 head large Cauliflower, cut into florets
- 1/4 Red Onion, cubed
- 1 tbsp Traditional Tunisian Harissa
- 1/4 cup Red Enchilada Sauce
- Salt & pepper
Ingredients Jalapeno Avocado Sauce:
Makes ~1.25 cups
- 2 large Avocados
- 2 small/medium Jalapenos
- 1 Serrano Pepper (can omit for less spice)
- 1 small bunch Cilantro (including stems)
- 1 medium Lime, juiced
- 3-4 cloves Garlic
- 1/4 cup Avocado Oil
- 1 tsp Sea Salt

- Crunchy Grain-Free Taco Shells
- Mexican Shredded Cheese

Instructions:
- Start off by prepping your cauliflower & onion. In a pan, add some olive oil & cook your onions on medium heat for 2-3 mins.
- Then add in your cauliflower. Cook for 5-6 mins until it starts to brown.
- Then add in your harissa, enchilada sauce, salt & pepper. Evenly mix & cook.
- Scoop everything out & into your air fryer. Use air fryer oven for this! Air-fry at 425* for 8 mins.
- Meanwhile, add all the ingredients for the sauce to a blender or food processor. Blend until creamy.
- Once your cauliflower is ready, grab a taco shell, fill with a layer of cheese & stuff with your cauliflower. Finally, top with your avocado sauce!
