Cranberry Baked Donuts


Vegan Cranberry Baked Donuts are a festive and flavorful treat, featuring moist and fluffy donuts infused with the tart sweetness of cranberries, all baked to perfection. The crimson-hued glaze adds a vibrant touch, enhancing the donuts with a burst of fruity goodness. These cruelty-free baked delights not only offer a delicious alternative to traditional fried donuts but also showcase the versatility of plant-based ingredients in crafting festive and indulgent treats.


Ingredients:

Makes 10-12 donuts:

  1. 25g dairy free butter *melted
  2. 120g dairy free yogurt
  3. 240g unsweetened soy milk
  4. 2 tsp vanilla bean extract
  5. 240g cake flour
  6. 100g sugar of choice
  7. 2 tsp baking powder
  8. 1 tsp baking soda
  9. 1/4 tsp sea salt
  10. 1/3 cup dried cranberries


Chocolate Coating:

  • 150g dairy free white chocolate
  • 1/2 tsp red beet powder & 1/4 tsp radish powder for the colour


Instructions:

  • Preheat the oven to 180c. Prepare a donut pan and set aside.
  • In a bowl, combine wet ingredients and whisk until smooth.
  • In a medium bowl, combine the flour, sugar, baking powder, soda and salt.
  • Add the wet ingredients to the dry ingredients and add in cranberries, stir until combined.
  • Add batter to a piping bag, snip a corner and pipe it in.Bake donuts for 12 minuets. Remove donuts from oven and let cool.
  • Combine red beet, radish powder andmelted chocolate. Dip the donuts into the chocolate.⁣ let it set.
