Dish with Carrots, Kabocha Squash and Orange Grape Tomatoes


The Vegan Dish with Carrots, Kabocha Squash, and Orange Grape Tomatoes is a vibrant and nutritious medley of colorful vegetables, showcasing the natural sweetness of roasted carrots and kabocha squash alongside bursts of freshness from orange grape tomatoes. Ingredients:

  1. 1 roasted carrot
  2. 1 garlic clove
  3. 2 Tbsp nutritional yeast
  4. 1/2 tsp salt
  5. 1/2 tsp black pepper
  6. 1/2 cup walnuts, soaked 6 hrs
  7. 1/2 cup veggie broth
  8. 6 oz lentil pasta (or pasta of choice)
  9. 1 cup chopped Kabocha squash
  10. 1 cup halved orange grape tomatoes
  11. Parsley


Instructions:

  • Blend together roasted carrot, garlic clove, nutritional yeast, walnuts, veggie broth, salt, and pepper until smooth.
  • Cook pasta according to directions, and throw in Kabocha squash 5 minutes before done cooking.
  • Drain pasta and squash and return to pot with orange grape tomatoes and sauce.
  • Toss together and garnish with parsley and black pepper.
