Ingredients:
- 1 roasted carrot
- 1 garlic clove
- 2 Tbsp nutritional yeast
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup walnuts, soaked 6 hrs
- 1/2 cup veggie broth
- 6 oz lentil pasta (or pasta of choice)
- 1 cup chopped Kabocha squash
- 1 cup halved orange grape tomatoes
- Parsley
Instructions:
- Blend together roasted carrot, garlic clove, nutritional yeast, walnuts, veggie broth, salt, and pepper until smooth.
- Cook pasta according to directions, and throw in Kabocha squash 5 minutes before done cooking.
- Drain pasta and squash and return to pot with orange grape tomatoes and sauce.
- Toss together and garnish with parsley and black pepper.
