Ingredients:
- 2 packed cups broccoli florets
- 1 tbsp olive oil
- 1/2 tsp each kosher salt and black pepper, divided
- 2 to 3 tbsp vegan butter, to taste
- 3 to 4 servings gnocchi
- Squeeze of lemon juice
- 1 to 2 tbsp finely chopped fresh parsley
- Red chili flakes for serving
- Vegan parmesan for serving
Instructions:
- Preheat oven to 400 degrees F.
- Cut florets into small, bite-sized pieces. Place them onto baking tray lined with parchment paper.
- Drizzle with olive oil, toss, and sprinkle with 1/4 of the salt and pepper. Roast for 10 to 15 min until just starting to brown in spots.Then remove from oven.
- Meanwhile, cook gnocchi according to package directions, then drain.
- Place a large pan on medium heat and add the butter. When melted, add cooked gnocchi and remaining salt and pepper.
- Cook for 3 to 5 min, reducing heat if needed, until gnocchi are starting to turn slightly golden in the outside.
- Stir in roasted broccoli, lemon juice and fresh parsley, and serve topped with red chili flakes and vegan parm.
