Grilled Cheese with Caramelized Onions


Grilled Cheese with Caramelized Onions is a comforting classic, boasting gooey melted cheese and sweet, savory onions sandwiched between golden, buttery bread. Each bite offers a symphony of flavors and textures, with the richness of the cheese perfectly complemented by the caramelized sweetness of the onions. This indulgent dish is a timeless favorite, perfect for satisfying cravings and warming the soul on chilly days.


Ingredients:

  1. 4 slices of sourdough
  2. 4 sliced of your favorite vegan cheese
  3. Fresh figs, sliced
  4. About 1 tbsp vegan mayonnaise (or vegan butter)


Caramelized onions:

  1. 1 large sweet onion, thinly sliced
  2. 1 tbsp vegan butter
  3. Pinch of salt
  4. 1 cup apple cider or juice


Instructions:

  • Saute sliced onions with vegan butter and salt over low heat for 8 to 10 minutes.
  • Add 1/2 a cup of liquid (cider or juice) to the pan, only stirring occasionally.
  • When the liquid is mostly gone, add the remaining half of cider or juice, and continue sautéing the onions until they are are rich in color, caramelized and delicious.
  • Spread sourdough pieces on one side with vegan mayo or butter.
  • Place one slice – buttered side down – onto your heated pan or grill pan, layer it with cheese, onions, sliced figs, another piece of cheese and the second piece of sourdough (buttered side up) and grill from both sides until bread is golden brown and cheese has melted.


Notes:

  • The perfectly caramelized onions take a bit of time, at least 20 minutes.
  • Don’t rush this step, don’t stir them around too much and use low heat to avoid burning.
