For the Lemon Sauce
- heated some olive oil in a small pot (enough to cover the bottom of the pot – ca. 4 or 5 tbsp.) over medium heat.
- Added 3 cloves of garlic (minced), reduced the heat to low and cooked that for about 1 minute.
- Added the juice and zest of half an organic lemon, some salt and pepper.
For the Pasta
- Cooked pasta (200g dry) and ca. 1/2 cup of pasta water.
- Made sure that everything was mixed well.
- Added some vegan parmesan for extra creaminess and served it with the pesto pasta and some more lemon juice and pepper on top.
- The lemon sauce was enough for 2 portions.
