Pecan Pie Pecan


Vegan Pecan Pie Pecan is a scrumptious dessert highlighting the natural sweetness of pecans in a plant-based pie. Ingredients:

  1. 1/2 cup medjool dates, pitted
  2. 1/4 cup almond flour
  3. 1/4 cup coconut flour
  4. 2 medjool dates, pitted
  5. 2 tablespoons almond butter
  6. 3 tablespoons maple syrup
  7. 2 tablespoons coconut oil
  8. 1/2 teaspoon of vanilla
  9. 1.5 cups pecan chopped


Instructions:

  • Preheat oven to 350 F. Grease rectangular pan with coconut oil.
  • Process the dates, almond flour and coconut flour into a huge dough.
  • Place dough in the rectangular pan and press to cover the entire surface.
  • In a food processer mix the rest of the ingredients, except the pecans.
  • Stir in the pecans.
  • Place the pecan mixture over the crust and distribute evenly.
  • Decorate the top with whole pecans.
  • Bake 15 min, cover with aluminum foil and bake 15 min more.
