Pesto with Creamy Cashew Sauce


Pesto with Creamy Cashew Sauce is a luxurious twist on the classic basil pesto, incorporating a velvety cashew-based sauce to enhance the richness and creaminess. The combination of vibrant herbs, garlic, and nuts in the pesto melds seamlessly with the luscious cashew sauce, creating a harmonious burst of flavor. Ingredients:

For the Cashew Creamy Sauce

  1. 1 cup cashews soaked⠀⠀
  2. 1 tbsp mustard⠀⠀
  3. juice of 1/2 lemon⠀⠀
  4. 2 cloves garlic⠀⠀
  5. 1 tbsp olive oil⠀⠀
  6. 2 tbsp nutritional yeast⠀⠀
  7. salt & pepper

Instructions:

  • Combine all ingredients in a blender and gradually add small amounts of water while mixing, until it’s creamy and smooth.
  • You can use this with pasta, salads or however you like.



For the Pesto

  1. 1 bunch basil⠀⠀
  2. handful baby spinach⠀⠀
  3. 2 cloves garlic⠀⠀
  4. 1/4 cup olive oil⠀⠀
  5. juice of 1/2 lemon⠀⠀
  6. 2 tbsp nutritional yeast⠀⠀
  7. 1/4 cup pine nuts

Instructions:

  • Combine in a blender and mix until smooth, you can add more olive oil if needed. perfect with cooked pasta.


Note:

  • You can store both of these in a container in the fridge for about a week but mine never last more than a day or two.
