Vegan Double Chocolate Cookies


Vegan Double Chocolate Cookies are a chocolate lover’s dream, featuring a rich cocoa-infused cookie dough studded with dairy-free chocolate chips for an indulgent treat. Ingredients:

  1. 1 cup coconut sugar⠀
  2. ½ cup vegan butter⠀
  3. 1 tsp vanilla extract⠀
  4. 1 tsp peppermint extract (optional to make it more festive)⠀
  5. 1 cup oat flour⠀
  6. ¼ tsp cinnamon⠀
  7. ½ cup + 2 tbsp raw cacao powder⠀
  8. 1 tsp baking soda⠀
  9. ¼ tsp baking powder⠀
  10. ½ tsp pink salt⠀
  11. 2 tbsp full fat coconut mylk⠀
  12. 1 cup vegan chocolate chips


Instructions:

  • Preheat oven to 350ºF (175ºC) & line a baking sheet with parchment paper.⠀
  • Cream together softened vegan butter, sugar, and vanilla.⠀
  • Add in all other ingredients & combine (excluding choco chips)⠀
  • Mix in chocolate chips with hands.⠀
  • Grab 1 tbsp of cookie batter, roll into a ball & place on baking sheet. Continue until all batter is gone.⠀
  • Bake for 12 minutes.
  • Let cool for 30 minutes.
