Vegan One-pot Creamy Coconut Curry


Vegan One-pot Creamy Coconut Curry is a wholesome and aromatic dish that brings together a medley of colorful vegetables and tofu in a velvety coconut-infused curry sauce. Ingredients:

  1. Broccoli
  2. Cauliflower
  3. Carrots
  4. Chickpeas
  5. Onions
  6. Coconut cream
  7. Cashews
  8. Salt & pepper
  9. Spices ▸ ginger, turmeric, curry balti, garam masala, cumin


Instructions:

  • Chop up the veggies.
  • In a large deep pan, cook onions in a splash of water, with ginger and turmeric.
  • Then add the veggies and all the other spices, and stir well.
  • Add just enough water so the veggies are not completely covered, and simmer for about 8 minutes or until just a little water remains.
  • Add drained chickpeas and coconut cream, more spices again, stir and cook 2 more minutes.
  • Lastly add cashews, salt, pepper and stir again.
  • Enjoy as is or with basmati rice
