Veggie Hempseed Salad Bowl

Ingredients:

  1. 1 small zucchini, sliced
  2. 3 c baby spinach
  3. 1/4 C cherry tomatoes, halved
  4. 1/4 avocado, sliced
  5. handful of fresh greens
  6. 1 TBSP hemp seed
  7. 1/2 lemon, juiced
  8. microgreens
  9. crushed red pepper


Instructions:

  • Add spinach to a small saucepan with 1/4 C water and cover. Steam until wilted and tender. drain.
  • Lay zucchini in a single layer in a skillet on medium heat and cook until golden. Flip and repeat.
  • Add to bowl with remaining ingredients and a squeeze of lemon.
  • Optional: with a piece of crusty bread or naan.
